Ingredients
  

  • 2 cups all-purpose flour (substitute with whole wheat or gluten-free blend)

  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup brown sugar (substitute with coconut sugar)
  • 1/2 cup unsweetened applesauce (substitute with mashed banana)
  • 1/2 cup vegetable oil (substitute with coconut oil)
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (substitute with pecans or almonds)
  • 1/2 cup plant-based milk (substitute with almond, soy, or oat milk)
  • 1 cup vegan cream cheese
  • 1/2 cup powdered sugar
  • 1/4 cup vegan butter
  • 1 tsp vanilla extract

Instructions
 

  • Preparation Steps:
    Set the oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
    In a bowl, combine the flour, baking powder, baking soda, cinnamon, and salt, whisking until evenly mixed.
    In another bowl, mix the sugar, applesauce, oil, vanilla, and plant-based milk until smooth.
    Gently fold the dry ingredients into the wet mixture, mixing until just blended.
    Gently blend the grated carrots and chopped walnuts into the mixture until evenly combined.
    Transfer the batter to the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    Let the cake cool on a wire rack for 10 minutes before transferring it to cool completely.
    For the frosting, beat the vegan cream cheese, powdered sugar, vegan butter, and vanilla until creamy.
    Frost the cooled cake evenly and slice to serve!

Notes

For a lighter, oil-free version, swap the vegetable oil with additional applesauce. You can also make this cake gluten-free by using a 1:1 gluten-free flour blend. This cake stays moist for days, making it perfect for meal prep or leftovers!
