- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder (optional)
- 3 tbsp tomato paste
- 1 cup shredded cheddar cheese (or your choice)
- Salt and pepper to taste

Preparation Steps:Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, then pierce them with a fork. Coat with olive oil and sprinkle with salt.Bake potatoes for 45-60 minutes, until tender.While baking, heat olive oil in a skillet over medium heat. Sauté chopped onion until soft, about 4-5 minutes, then add garlic and cook for 1 minute.Add minced meat to the skillet, cooking until browned. Stir in paprika, cumin, chili powder, salt, and pepper, mixing well. Add tomato paste and cook for another 2-3 minutes.Once the potatoes are ready, cut them in half and scoop out the flesh, leaving a thin border.Mash the scooped potato and combine with the seasoned meat mixture.Stuff the potato skins with the mixture, top with shredded cheese, and return to the oven for 10-15 minutes until cheese is melted and bubbly.Garnish with fresh herbs and optional sour cream.
