Ingredients
  

Main Ingredients:

  • 2 chicken breasts – sliced or pounded evenly
  • 1 cup cooked white rice – use fresh or day-old
  • 1 cup grilled corn kernels – fresh canned, or frozen
  • 1/2 avocado – sliced optional garnish
  • 2 tbsp Cotija cheese – crumbled
  • 1 lime – cut into wedges
  • 1 tbsp olive oil – for cooking

Creamy Elote Sauce:

  • 2 tbsp mayonnaise
  • 2 tbsp sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp chili powder or smoked paprika
  • Salt to taste
  • Optional: pinch of garlic powder or chopped cilantro

Instructions
 

Marinate & Cook the Chicken:

  • Rub chicken breasts with olive oil, salt, pepper, and a sprinkle of chili powder.
  • Grill or sear in a pan over medium heat for 5–6 minutes per side, until golden and cooked through. Rest, then slice.

Char the Corn (If Using Fresh):

  • Grill or roast corn kernels in a dry pan until lightly charred for extra flavor.

Mix the Creamy Sauce:

  • Combine mayonnaise, sour cream, fresh lime juice, chili powder, and a pinch of salt in a bowl, whisking until the mixture is silky and well blended.

Build the Bowl:

  • Start with a layer of warm rice.
  • Add sliced grilled chicken, charred corn, and avocado.
  • Drizzle with the creamy sauce.
  • Finish with a sprinkle of Cotija cheese, a few lime wedges, and a touch of fresh cilantro if you like.
