- 1.5 to 2 kg (3-4 lbs) of beef chuck, pork shoulder, or lamb
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 3 tbsp honey (for sauce)
- 2 tbsp honey (for onions)
- 4 cloves garlic, minced
- 1 cup beef or vegetable broth
- 2 tbsp balsamic vinegar
- 1 tsp dried thyme or fresh sprigs
- 1 tsp dried rosemary or fresh sprigs
- Salt and pepper to taste
- 2 tbsp soy sauce (optional)
- 1 tbsp Dijon mustard (optional)
Preparation Steps:Preheat oven to 160°C (320°F).Season meat with salt and pepper.Heat olive oil in a large pot and sear meat until golden on all sides. Remove and set aside.In the same pot, caramelize onions with honey until golden. Remove and set aside.Add garlic to the pot, then pour in broth, balsamic vinegar, soy sauce, and Dijon mustard. Stir to deglaze.Add thyme, rosemary, salt, and pepper. Place meat back in the pot and cover. Cook in the oven for 3-4 hours, or until tender.Once cooked, rest the meat, then shred and serve with honeyed onions and sauce.
For best results, use tougher cuts of meat like beef chuck or lamb shank, as they become incredibly tender when slow-cooked. Feel free to adjust the sweetness by adding more or less honey depending on your preference.
