Ingredients
  

  • 2 Ribeye or Sirloin Steaks about 200g each
  • 500 g Baby Potatoes cut into halves
  • 5 cloves Garlic minced
  • 3 tbsp Butter
  • 2 tbsp Olive Oil
  • Fresh Rosemary or Thyme 1-2 sprigs
  • 1 tsp Salt or to taste
  • ½ tsp Black Pepper or to taste
  • Optional: ½ tsp Paprika for extra flavor

Step 1: Choose and Prep Your Ingredients

  • Steak:
    Use 1 lb (450g) of sirloin, ribeye, or strip steak. Let the steak rest at room temperature for a short while before cooking—this helps it cook evenly from edge to center.
    → Slice it into 1-inch strips for quicker cooking and better searing.
  • Potatoes:
    Rinse 1 lb (450g) of baby potatoes and slice them in half—no peeling needed. Ensure the pieces are cut to a consistent size for even cooking.
    → Parboiling before pan-frying ensures they're soft inside and crispy outside.
  • Garlic:
    Mince 5 cloves of garlic or use a garlic press for even flavor distribution.
  • Butter & Oil:
    Use 4 tbsp butter and 2 tbsp olive oil—the perfect combo for flavor and high-heat cooking.
  • Herbs & Seasonings:
    Add a couple of sprigs of fresh rosemary or thyme, along with salt, black pepper, and paprika for a touch of smokiness.

🔥 Step 2: Parboil the Potatoes

  • Add the halved baby potatoes to a saucepan, then pour in cold water until just covered. Season with salt to enhance the flavor.
  • Bring the water to a boil and cook the potatoes for 6–7 minutes, until they’re tender enough to pierce with a fork but still hold their shape.
  • Drain the potatoes and allow them to steam dry for a few minutes, which helps achieve a crispier texture when cooking.

  • Warm 1 tablespoon of olive oil in a heavy skillet over medium-high heat until it shimmers and coats the pan evenly.
  • Blot the steak slices gently with a paper towel to remove excess moisture.
  • Sprinkle the steak with a hearty pinch of salt, freshly ground pepper, and a touch of paprika for added depth, if desired.
  • Arrange the steak slices in the pan in a single layer, making sure not to overcrowd it.
  • Sear the steak for 2–3 minutes on each side, adjusting the time based on thickness and how you like it cooked.
  • Once browned and cooked, remove the steak from the skillet and set aside to rest.

  • Using the same skillet, add 2 tablespoons of butter along with an extra tablespoon of olive oil, letting them melt together into a rich, golden base.
  • Once the butter is melted and bubbly, stir in the minced garlic and cook for about 30 seconds until aromatic.
  • Carefully add the parboiled potatoes cut-side down.
  • Allow them to cook undisturbed over medium heat for 6–8 minutes, until they develop a deep golden crust and crispy edges.
  • Toss gently and cook for another 3–4 minutes to get color on all sides.

  • Push potatoes to one side of the skillet.
  • Return the seared steak slices to the pan.
  • Add the remaining 2 tablespoons of butter, stirring slowly to ensure everything is evenly coated with the creamy, rich butter.
  • Place rosemary or thyme sprigs on top and lower the heat.
  • Let it cook for an additional 2–3 minutes so the ingredients meld together and heat evenly.
