Ingredients
  

  • 2 large eggplants (sliced into ½-inch rounds)
  • 3 tbsp olive oil

  • 1 lb ground beef or lamb
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can crushed tomatoes (14 oz)
  • 2 tbsp tomato paste
  • ½ tsp ground cinnamon
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk (warmed)
  • 1 cup heavy cream
  • ¼ tsp ground nutmeg
  • Salt and pepper to taste
  • 1 large egg (beaten)
  • 1½ cups grated cheese (Parmesan or cheddar)
  • Fresh parsley or basil leaves (chopped)

Instructions
 

  • Preparation Steps:
    Roast the Eggplant: Preheat oven to 400°F (200°C). Slice eggplant and roast with olive oil, salt, and pepper for 20-25 minutes until golden brown.
    Prepare the Meat Filling: Cook minced onion and garlic in olive oil, add ground meat and cook until browned. Add crushed tomatoes, tomato paste, and spices. Simmer for 10-15 minutes.
    Make the Béchamel Sauce: Melt butter, stir in flour to make a roux. Gradually add milk and cream, whisk until thick. Add nutmeg, salt, and pepper, then whisk in a beaten egg.
    Assemble the Moussaka: Layer roasted eggplant, spiced meat filling, and béchamel in a baking dish. Top with grated cheese.
    Bake: Bake at 375°F (190°C) for 30-35 minutes, until golden and bubbly. Let rest before serving.
    Garnish and Serve: Top with freshly chopped parsley or basil before serving.

Notes

For a vegetarian version, swap the meat with lentils or a mix of your favorite vegetables. Adjust spices to your taste for a more personalized dish. Moussaka can be made ahead and stored in the fridge, making it a great option for meal prep or a hearty lunch.
