Ingredients
  

  • 2 tbsp olive oil
  • 1.5 lb beef stew meat chuck roast, cut into chunks
  • Salt & pepper to taste
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 carrots peeled and sliced
  • 3 potatoes peeled and cubed
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tbsp Worcestershire sauce
  • Optional: 1 cup peas added at the end
  • Fresh parsley for garnish

Instructions
 

  • Brown the Beef:
    Warm a splash of olive oil in a big pot over medium-high heat until it shimmers. Season beef with salt and pepper. Sear in batches until browned on all sides. Set aside.
  • Sauté the Aromatics:
    In the same pot, reduce heat to medium. Toss in the chopped onion and sauté for 3–4 minutes until it softens and becomes slightly clear. Mix in the minced garlic and let it cook for another minute, releasing its aroma.
  • Build the Stew Base:
    Stir in the tomato paste until it evenly covers the onions. Next, pour in the beef broth, gently deglazing the bottom of the pot to release all the flavorful bits. Add browned beef back in.
  • Add Veggies & Seasoning:
    Toss in carrots, potatoes, thyme, bay leaves, and Worcestershire sauce. Stir, bring to a boil, then lower heat to a gentle simmer.
  • Simmer Slowly:
    Cover and let the stew simmer for 1.5 to 2 hours, stirring occasionally, until beef is fork-tender and vegetables are cooked through.
  • Final Touch:
    Remove bay leaves. If adding peas, mix them in and let the stew gently simmer for 5 more minutes. Adjust seasoning with salt and pepper. Garnish with fresh parsley.

Notes

For deeper flavor, try adding a splash of red wine while sautéing the onions. Want it thicker? Mix 1 tbsp flour with cold water and stir into the stew 15 minutes before it’s done.
