Ingredients
  

  • 2 Boneless chicken breasts
  • 1 cup Buttermilk
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • Salt and pepper To taste
  • 1 cup All-purpose flour
  • ½ cup Cornmeal
  • 1 tsp Baking powder
  • 1 Large egg
  • 1 cup Panko breadcrumbs
  • 4 Soft burger buns
  • 1 tbsp Butter
  • 4-6 Lettuce leaves
  • 1 large Tomato, sliced
  • 1 small Red onion, sliced thin
  • Pickles, sliced (optional) As needed
  • 4 Cheese slices (cheddar, Swiss, etc.)
  • ¼ cup Mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp Ketchup
  • 1 tbsp Barbecue sauce
  • 1 tbsp Honey
  • Salt and pepper To taste

Instructions
 

  • Prepare the Chicken Patties
     Cut the chicken breasts into even-sized pieces. 
    Marinate in buttermilk, garlic powder, onion powder, paprika, salt, and pepper for at least 30 minutes.
  • Prepare the Coating
     In a bowl,combine flour, cornmeal, baking powder, salt, and pepper.
     Whisk the egg in a separate bowl.
     Place panko bread crumbs in another shallow bowl.
  • Coat the Chicken
     Dredge chicken in flour mixture, ensuring even coverage.
     Dip into the egg mixture.
     Coat with panko breadcrumbs, pressing gently.
  • Fry the Chicken
     Heat oil to 350°F (175°C).
     Fry for 4-5 minutes per side until golden brown and cooked through.
  • Toast the Buns
    Butter the buns and toast them in a skillet until golden.
  • Assemble the Burger
    Spread sauce on both buns.
     Layer lettuce, crispy chicken patty, cheese, tomato, and onion.
     Add pickles and top with the bun.
  • Serve
