Ingredients
  

  • 1 whole chicken (cut into pieces) or 6 chicken thighs/drumsticks
  • 2 tbsp olive oil
  • 1 large onion, finely sliced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 2 potatoes, cut into wedges
  • 1/2 cup water or chicken stock
  • 1/4 cup chopped fresh parsley or cilantro
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • ¼ cup Fresh parsley/cilantro chopped

Instructions
 

  • Preparation Steps:
    📌 Step 1: Season chicken with salt, pepper, turmeric, ginger, and garlic. Let it marinate for a few minutes.
    📌 Step 2: Heat olive oil in a tagine or heavy pot. Sauté onions until soft.
    📌 Step 3: Add chicken, sear on both sides for a golden-brown color.
    📌 Step 4: Arrange carrots, zucchini, and potatoes around the chicken.
    📌 Step 5: Pour in warm water or chicken stock. Cover and simmer for 45-50 minutes.
    📌 Step 6: Garnish with fresh parsley or cilantro. Serve with crusty bread.

Notes

  • For extra depth of flavor, add preserved lemons or green olives.
  • Adjust vegetables based on seasonality—sweet potatoes or bell peppers work great!
  • If you don’t have a tagine, a Dutch oven or deep pan will work just as well.
