Ingredients
  

  • 3 ripe bananas mashed
  • 2 large eggs room temperature
  • ½ cup Greek yogurt or unsweetened applesauce
  • ¼ cup olive oil or melted butter
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour or whole wheat or gluten-free flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon optional
  • ¼ teaspoon salt
  • 1 cup fresh or frozen blueberries tossed in flour
  • 1 tablespoon flour for coating blueberries

Instructions
 

  • Step 1: Preheat Your Oven
    Preheat your oven to 350°F (175°C).
    Lightly coat a 9x5-inch loaf pan with butter or cooking spray, or use parchment paper for effortless release after baking.
  • Step 2: Prepare the Bananas
    Take 3 ripe bananas and peel them.
    Place them in a large mixing bowl.
    Using a fork or potato masher, mash the bananas until smooth, with a few small lumps. They should look almost like puree.
    The more overripe your bananas are, the richer and more tender your banana bread will turn out.
  • Step 3: Mix the Wet Ingredients
    To the mashed bananas, add the following:
    2 large eggs (room temperature)
    ½ cup of Greek yogurt or unsweetened applesauce
    ¼ cup olive oil or melted butter
    ¼ cup of honey or maple syrup, depending on your preferred natural sweetener.
    1 teaspoon vanilla extract.
    Whisk everything together until smooth and well combined.
  • Step 4: Mix the Dry Ingredients Separately
    In a separate medium bowl, whisk together:
    2 cups of all-purpose flour, or substitute with whole wheat or gluten-free flour if preferred.

    1 teaspoon ground cinnamon (optional, but adds warmth)
    ¼ teaspoon salt
    Stir until the dry ingredients are well blended.
  • Step 5: Combine Wet and Dry Ingredients
    Carefully blend the dry ingredients into the banana mixture, stirring gently until just combined.
    Use a spatula or wooden spoon to gently fold the mixture. Mix gently to avoid overworking the batter—it's fine if a few flour streaks remain.
    Overmixing can lead to dense, dry banana bread, so stop mixing as soon as you don’t see dry patches.
  • Step 6: Prepare the Blueberries
    Take 1 cup of fresh or frozen blueberries.
    If using frozen, do not thaw them beforehand.
    Toss the blueberries in 1 tablespoon of flour. This helps keep them evenly distributed throughout the loaf as it bakes.
    With a spatula, gently fold the flour-dusted blueberries into the batter to keep them intact.
  • Step 7: Pour the Batter into the Pan
    Transfer the batter to your prepared loaf pan.
    Use a spatula to spread it out evenly.

  • Step 8: Bake to Perfection
    Set the loaf pan on the middle rack of the oven for even baking.
    Bake for 50–60 minutes.
    At the 45-minute mark, check your bread. If the top starts to brown too fast, tent it lightly with foil to prevent overbaking.
    Test for doneness by inserting a toothpick into the center of the loaf — it should come out clean or with a few moist crumbs.
  • Step 9: Cool the Bread
    Once baked, remove the loaf from the oven.
    Allow the bread to rest in the pan for 10 to 15 minutes before removing it.
    Next, move the bread to a wire rack and allow it to cool completely before cutting.
    This step is important to allow the flavors and texture to set.
  • Step 10: Slice and Enjoy!

For a healthier twist, substitute the flour with whole wheat flour and reduce the amount of honey for a less sweet version.
